Cupping – A Professional Coffee Tasting Ritual.

     Most people would not consider coffee to have more depth of flavor characteristics than wine, but it is true. Similar to wine, in order to communicate the characteristics of coffee flavor, a common set of terminology generally agreed upon.

     The activity of tasting coffee to rate or judge the flavor characteristics and quality of a coffee is called “Cupping” and a professional coffee taster that performs this coffee tasting ritual is called a “Cupper”.

     With cupping, the coffee is ground into a small porcelain or glass cup, and hot water is poured on top of the coffee. The coffee steeps for a few minutes as the grinds rise to the top, forming a crust. The crust is broken with a spoon and the cupper evaluates the coffee’s aroma. After the coffee cools down a little, the cupper slurps the liquid and evaluates the coffees flavor.

     The cupper is only interested in the taste evaluation, not actually consuming or swallowing the coffee, and spits out the coffee into a container. During a cupping session, the cupper will typically evaluate many samples of coffee.

Cafe Mocha

 

You will need:

1/4 cup cafe mocha flavor coffee creamer (liquid)

2 shots brewed strong coffee

1/2 cup low fat milk (steamed)

2 tablespoons softly whipped cream

cocoa powder

Instructions:

Divide  coffee and steamed milk between 2 cups, stir, top with dollop of whipped cream, sprinkle with cocoa powder.

Recipe: Chocolate Mint Cappuccino

                                                Chocolate Mint Cappuccino
Hot Beverage

1/2 cup milk
1 to 2 teaspoons peppermint flavored syrup
2 tablespoons sundae chocolate syrup
1/4 cup fresh hot strong brewed coffee
unsweetened cocoa powder or chocolate curls, for garnish

Instructions:
1) pour milk into 1 qt. microwave safe bowl. Microwave on high 1 to 1.5 minutes or until hot but not boiling. Beat hot milk with electric mixer, increasing speed as milk begins to thicken. Continue to beat until foam doubles. Steamed milk will settle to the bottom. Foamed milk will rise to the top.

2) Pour peppermint and chocolate syrups into standard-sized coffee cup. Microwave on high 20 seconds to warm. Stir in coffee.

3) Add 1/4 cup steamed milk. Spoon on foamed milk to brim of cup. Sprinkle with cocoa powder or garnish with chocolate curls.  Serve immediately.

4) A variety of flavored syrups that enhance coffee drinks are available in supermarkets aisles, speciality coffee houses, gourmet food shops and on-line.

History of coffee

     The history of coffee goes at least as far back as the thirteenth century.  The story of Kaldi, the 9th century Ethiopian goat herder who discovered coffee while searching for his goats, didn't appear in writing until 1671 and is probably apocryphal. From Ethiopia, coffee was said to have spread to Egypt and Yemen.  The earliest credible evidence of either coffee drinking or knowledge of the coffee tree appears in the middle of the fifteenth century, in the Sufi monasteries of Yemen. By the 16th century, it had reached the rest of the Middle East, Persia, Turkey and North Africa.  Coffee then spread to Balkans, Italy, and to the rest of Europe, to Indonesia and then to America.
     No one knows exactly how or when coffee was discovered, though there are many legends about its origin.   SunRise Coffee and Tea.
